Spinach and Artichoke Quiche Recipe
1 Frozen pie crust (do not thaw)5 large eggs
1 C. Milk or Cream
1 C. Shredded Sharp Cheddar
½ C Shredded Parmesan cheese
14oz. Can of Artichoke Hearts
5 oz. (half a box) Frozen Spinach, thawed & drained
½ tsp Salt
½ tsp fresh cracked pepper
Whisk eggs in a large mixing bowl, then add milk and cheese. Squeeze excess moisture out of artichoke hearts, chop and add to mixture. Chop Spinach and add to mixture. Season with salt and pepper. Pour mixture into frozen pie shell. Bake for 50 minutes at 400 degrees. It should not be soft or wobbly in the center.
